I have been reading Can You Stay For Dinner, a great blog by a young women who has lost weight and developed a bunch of great recipes. I saw these Turkey Wraps on her blog and just had to give them a try.
I have made the wraps a couple of times both with ground turkey and ground chicken. I have to say the ground chicken was SOOOOOO much better! I buy low-fat ground chicken but it is so much more tender and moist that when I use lean ground turkey.
These wraps come together in about 25 minutes and make a great (& healthy) weeknight meal.
1 pound lean ground chicken
1 – 8 ounce package of white button mushrooms washed & diced
1 red bell pepper, chopped
2 teaspoons ginger paste or fresh finely chopped ginger
2 teaspoons sesame oil
2 tablespoons soy sauce
2 tablespoons of hoisin sauce
1 tablespoon brown sugar
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1/2 cup water
2 teaspoons chili powder
5 green onions, chopped
2 cups carrot shreds
1 head of Boston (aka Bibb or butter) lettuce, washed and leaves separated
Spray a 12 inch skillet with cooking spray. Over medium-high heat cook the ground chicken, mushrooms, and red pepper. As your cooking the chicken, break it up with the wooden spoon. Once the turkey is fully cooked and starting to brown, sprinkle of the chili powder over the turkey mixture and stir.
In a small bowl, whisk together the sesame oil, soy sauce, places us, garlic, ginger, brown sugar, and 1/2 cup water. Pour this sauce over the cooked turkey, mushroom, and pepper mixture.
Add the green onions and carrots to the mixture and stir to combine. Simmer for about five minutes stirring frequently until the liquid mixture reduces.
To serve, spoon the turkey mixture onto the leaf of lettuce and eat like a handheld taco.
